All About Phiffany

Monday walking into the kitchen at school I was really nervous. For so long this is what I've wanted to do. Once we started watching demonstrations and then she said "ok go", I just went like it was second nature to me. All my sauces came out really well. Tuesday I learned to make my own mayonnaise, caesar dressing, and hollandaise sauce. Today was all day in a classroom. I learned vocabulary, different positions in the kitchen, and different programs they offer. In Cultural theory I learned about cuisines from India, Thailand, and Spain. I learned that culture and religion is an integral part of cooking. The nutrition class is a little disorganized. I learned that they don't refer to the nutrition pyramid anymore they call it my dinner plate. Its about balancing daily nutrition values. This is important to me because my mom and sister are diabetic and have had a hard time sticking to diets they don't like. Tiffany had gestational diabetes when she was pregnant and it was hard on her. I think learning how to cook for people that are diabetic so that they enjoy whats good for them is really important to me. I'm really excited for next week because I'm going to learn how to make soups. I'm especially excited for New England Clam Chowder. When I'm not at school I am working at Verizon. I'm up for the management training program. I have Wednesdays off. After this Sunday I will have Sundays off as well. I just need more time with my family. Those are the days that I really get to be with Tiffany and Brooklyn. They are my life.

I am so proud of Phill. He has really accomplished a lot working for Verizon and now going back to school. I am so lucky to have him in my life. I've been getting ready for school to start. I'm really excited for my classes. But right now, I feel so blessed to be spending time with Brooklyn everyday. She is counting, talking, and swimming. She is so very smart. She loves to draw. I find it so interesting that I didn't have to teach her how to hold her pencil. When I helped teach Pre-K that was a big deal. Now if potty training was that easy I would be even more excited. She likes to come up to me and point to her butt and say poo poo. In other words change me this is gross. She will go pee pee on her potty but for some reason number 2 just isn't happening on her potty chair. Now you might think I'm not trying, but believe me I have. One time she ran from the toilet and pooped in the hallway. Another time she took her diaper off and pooped right next to her bed, came to me butt naked and said poo poo I was so confused LOL. This is motherhood and I love it because she is so funny. Her favorite movie is Willow. Anytime someone turns on a TV she says wiwoah, she cant say the L sound LOL. Recently, her favorite thing to do is call daddy and talk to him. She calls random people as well so if you have been texted random letters or called by her I'm sorry. I tried putting my phone on airplane mode but she learned how to turn that off. She observes everything! I'm looking forward to taking her to Sea World coming up this August. It is going to be so fun. Seeing everything through her eyes has changed my perspective on life. She has me in the palm of her hand.
